ST. CLOUD, Fla. — Easter Sunday is coming up, and an Osceola County woman is taking her Easter obsession to the national level.
Elaine Duran is battling it out on Easter Basket Challenge, airing on Food Network.
1. “I like to say that my brain is like a rainbow,” Duran said, smiling as we met up with her for Easter cupcake demos. For her, Easter takes the cake. “I'm a very religious girl, so it's about who has brought me this far.”
2. She has had quite a tough journey, starting back in 2008. “I lost my job, and my husband had suffered a heart attack,” she said. “I was like, How am I going to do this? I need to reinvent myself. So a friend of mine gave me a great idea of, Hey, let's go take a cake class together … We're manicurists. We can do this.”
3. She was hooked, even launching EverythingElaine.com as a bona fide cake designer and business owner. But then, another bombshell. “I was diagnosed with stage 4 breast cancer… It was about, am I going to live?” Duran fought the heck out of it. “Literally a week before I was asked to go on the Food Network, I got the OK from my doctors.”
4. Easter Basket Challenge is hosted by Sunny Anderson and is a baking competition where seven Easter-obsessed bakers create holiday masterpieces through five one-hour episodes. The competition is judged by Jordan Andino and Claudia Sandoval. One baker is eliminated each episode with the final three competitors battling it out for the Bunny Money prize - a golden egg filled with $25,000.
5. In the VIDEO above, Duran offers up some cute and creative Easter cupcake ideas. You can also meet her and take a class — Cake It and Take It — to learn how to make a personalized bunny cake. Her Orlando class is happening three times this Friday, April 2, at 10 a.m., 1 p.m., and 6 p.m. at Fondant Source Cake & Craft in Orlando.
