ORLANDO, Fla. — A popular Dominican breakfast dish is now the namesake of a new Orlando eatery.
Los Tres Golpes presses up against downtown Orlando, on the north side. Through happenstance and social media, Chef Stanley Salazar connected with two other gentlemen to bring New York to The City Beautiful.
“I just wanted a change,” said Salazar, smiling, about his recent move to Orlando and starting a restaurant here.
For this week’s Chef’s Kitchen, we’re getting two recipes. The first one is a doughless, tostones-based pizza, and the other is a gooey burger-like concoction inspired from Harlem.

Recipe #1: Los Tres Golpes Pizza
Ingredients
- 2 green plantains cut into 1-inch pieces
- 3 tablespoons marinara sauce
- 1 pint mozzarella cheese
- 3 ounces of diced salami
- 3 ounces of diced fried cheese
- 2 ounces mayonnaise-ketchup sauce (see below)
- 1 fried egg
Mayo-ketchup ingredients
- 6 ounces mayonnaise
- 6 ounces ketchup
- 1 ounce garlic
- 1 teaspoon Adobo
Directions
- Mix together the mayo-ketchup ingredients, and set aside.
- Fry green plantains for 3 minutes
- Season plantains to taste, and mash to create a doughy mixture.
- Remove plantain dough, and form a pizza crust.
- Fry plantain crust for 2 minutes.
- Remove the crust from the fryer.
- Add marinara sauce and mozzarella, and cook in the oven until the cheese melts, for about 2 minutes.
- Fry the salami and cheese, and add to the pizza.
- Drizzle the mayo-ketchup mixture over the top, and top with a fried egg.
Recipe #2: OG Chopped Cheese
Ingredients
- 6 ounces Black Angus beef
- 3 ounces American cheese
- 3 ounces lettuce
- 4 tomato slices
- 2 ounces pickles
- 2 ounces sliced red onion
- 1 ounce garlic butter
- 1 10-inch bread
- Salt and pepper to taste
House sauce ingredients
- 6 ounces mayonnaise
- 3 ounces ketchup
- 2 ounces relish
- 2 ounces yellow mustard
Directions
- Mix together the house sauce ingredients, and set aside.
- Cook the Black Angus meat.
- Spread garlic butter on the bread and toast.
- Add American cheese to the meat and chop it up.
- Add chopped meat to the bread, and press until crispy and golden brown.
- Dress the sandwich with lettuce, tomatoes, onions and pickles, and drizzle the house sauce over the top.
- Wrap the sandwich, and cut diagonally.
