ORLANDO, Fla. — Here’s how to make Terralina Crafted Italian's seafood cannelloni, courtesy of Chef Justin Plank.
Ingredients:
- 4 fresh pasta sheets
- 4 oz. salmon diced
- 4 oz. white fish diced
- 3 oz. baby shrimp
- 3 oz. baby scallops
- 6 oz. mascarpone cheese
- 2 oz. panko bread crumbs
- 3 oz. shredded mozzarella cheese
- 2 tablespoons chopped chives
- 2 tablespoons chopped parsley
- 1 lemon (zest and the juice)
- 1/2 cup heavy cream
- 2 cups of lobster bisque (you can get at your local seafood market)
Directions:
- In a bowl, combine salmon, whitefish, shrimp, scallops, herbs, lemon zest, and juice with mascarpone and cream. Season with salt and pepper.
- Lay out 4 pasta sheets and divide seafood mixture between the sheets and roll into little rectanglular tubes, sealing the ends shut.
- Place in casserole dish with 1/4 cup of water and bake for 20 minutes at 350 degrees.
- Remove the dish from the oven and pour the lobster bisque onto the cannelloni and top with mozzarella cheese and panko.
- Return the casserole dish into the oven at 425 degrees and bake for 10 minutes.
